DF/GF/SF COWBOY CAVIAR

COWBOY CAVIAR is a multipurpose appetizer option or condiment. NO DAIRY, GLUTEN, OR ADDED SUGAR.

THINK TACOS AND DIPS! Use this as a salsa replacement, a topping for salads, on burgers, taco salads, savoury breakfasts and so much more.

For this recipe, I went heavier on the vegetables and lighter on the corn and beans. There are so many combinations you can use! Corn, beans, and sweet bell peppers will have the highest amount of carbohydrates - if you are watching your carb intake, you can omit these or reduce them and use more of the other vegetables instead. Personally, I like having the taste of all of these ingredients, and since this is used as a condiment more than an actual meal, I have no issue making this recipe the way I have it listed.

Use these ingredient amounts as a guide - you will have about 7 cups of chopped ingredients in total. Don’t worry if you have more or less - you can adjust the dressing or cut the recipe in half.

You may wish to double up the beans and eliminate the corn, or maybe you aren’t a tomato fan and prefer more peppers instead. Swap the black beans for any other bean or chickpeas.

MAKE THIS YOUR OWN!

  • 5 cups black beans, drained (15oz can)

  • 2 bell peppers, finely chopped

  • ½ red onion, finely chopped

  • 1-2 seeded jalapeño peppers, finely chopped

  • 2 cups diced Roma tomatoes *

  • 1 cup organic corn

  • 1 large avocado or 2 small, diced **

*you can use drained petite diced tomatoes from a can like I did if you don’t have enough fresh

**if making ahead, add the avocado right before serving

Mix all of the ingredients together and make sure the vegetables and other add-ins are drained. Choose your dressing below and add about 1/2 of the mixture to begin. Stir and taste, and continue drizzling until it is dressed to your satisfaction.

Other add-ins: finely chopped mango or pineapple (if you like a little sweetness), grape tomatoes instead of regular, black olives, DF or regular feta cheese, chopped roasted red pepper, chopped zucchini, green chilies and the list goes on!

Dressing Ideas⬇️

CHILI LIME DRESSING:

• 1/4 cup extra virgin olive oil

• 1/4 cup lime juice

• 2 cloves garlic, minced or pressed

• 4 drops monkfruit liquid (sugar-free) OR 1.5 tsp maple syrup or honey

• 1 tsp red chilli flakes or chilli powder

• 1/2 teaspoon ground Cumin

• 1 tsp unrefined salt

• 2 tsp cilantro (optional)

ITALIAN STYLE DRESSING

1/4 cup olive oil

¼ cup vinegar (white/red wine or ACV)

2 cloves garlic, pressed or minced

1 tsp unrefined salt, to taste

1 tsp dried oregano

1 tsp tsp dried basil

1 tsp maple syrup or honey, or 4 @sweet.monk drops for a sugar-free option

STORE IN THE FRIDGE!

Best if consumed within 5 days.
