Olive Oil Dill Butter

Healthy DILLY BUTTER with olive oil! Let’s use that fresh dill and make a delicious spread! Only 4 main ingredients, plus a dairy free option! This homemade spread only takes minutes to prepare, and it is free from ingredients you will find in store bought “spreads” and butters (ie: preservatives, seed oils, trans fats, soy, dyes or natural flavours). This recipe is loaded with nourishing healthy fats and the bonus is you get the wide array of nutritional benefits of both the EVOO and grass-fed butter! 



Fresh dill sprigs are full of amazing health benefits including Vitamin A, C, D, riboflavin, manganese, folate, iron, copper, potassium, magnesium, zinc and fibre. 

This recipe can easily be doubled 


• 1/4 cup salted butter (I used grass-fed) *

• 1/4 cup extra virgin olive oil

• 1/3 cup fresh chopped dill or more if you prefer 

• 2 minced garlic cloves




*sub coconut oil or ghee for butter if dairy free. 

INSTRUCTIONS

Blend butter and olive oil in food processor, then add the fresh dill and garlic. Purée until the garlic and dill are finely chopped. Add a sprinkle of unrefined salt @redmonds .

 Optional add-ins: all purpose seasoning blend or 1 pack of @true lemon for a little zing! 

Store in the fridge. Leave it out at room temperature for a few minutes to have a more spreadable consistency. 

How to use it?

-Sauté vegetables 

-Asparagus 

-Roasted vegetables 

-Use it for potatoes or roasted potatoes (I love spreading it in cut baby potatoes before roasting) 

-Mix in rice or other cooked grains 

-Cook eggs or omelettes with it 

-For chicken or other meat recipes 

-Salmon or other fish
