Easy Feta Marinated Olives
Skip the olive bar and do it yourself in MINUTES! Is there a problem with store-bought marinated olives? It depends. What I’ve noticed lately is stores are swapping out traditional olive oil marinated olives for seed oils without telling us. Olives in true olive oil are very nutritious and a wonderful source of healthy fats, vitamin E and polyphenols (which have effective antioxidant properties).
Olives are great for charcuterie boards, appetizers, chicken recipes and they are a wonderful addition to a savoury snack.
One of my favourite easy olive recipes is with feta. I remember a moment when I went to an italian market and spent about $20 on a small container of feta-marinated olives. I was so shocked! Never again. Homemade tastes just as good (if not better) and I am in control of the ingredients and oil used
Use this recipe as a guide! You can add more feta or use less of it. Make sure there is enough olive oil and lemon juice to evenly coat the olives. Play around with different herbs and seasonings if you wish. Store in the fridge and bring to room temperature before serving.
½ cup feta cheese, crumbled or cubed
1 cup pitted olives (Castelvetrano, Cerignola, or other unpitted green olives)
3 tbsp olive oil
1 tbsp lemon juice
1/4 tsp red pepper flakes
1/2 tsp dried oregano
1.5 tsp dried or fresh chopped rosemary
1/4 tsp unrefined salt
Fresh ground pepper to taste
Optional: add chopped sundried tomatoes
Make sure the olives are drained and pat dry before mixing in the ingredients.
